Fermentations are spontaneous; Chardonnay is raised on lees in barrel without racking, and the Pinot Noir rserve perptuelleinitiated in 2016is refreshed annually. The wine is bottled without fining or filtration and finished Extra Brut using a liqueur based on the Pinot Noir
