2024 Eleni & Edouard Vocoret Valmur, Chablis Grand Cru, France 1.5L Magnum Dhondt-Grellet Aging: in stainless steelValmur is a cool, amphitheater shaped grand cru with thin clays over Kimmeridgian limestone that delivers tension and laser precision. The fruit is hand harvested, gently pressed, and fermented with native yeasts; levage runs on fine lees mainly in stainless steel with a small share in seasoned barrels and no new oak to preserve cut and salinity.
