In the last several years, however, many producers have decided to stop ros production in favor of making Bourgogne rouge. There is more money to be made with Bourgogne Rouge, and the demand is higher. Cyril Audoin is not one of those winemakers. Instead he crafts an old vine (60yr) estate ros with utmost care and attention; the same he would give to any of his
