This bottling is taken from the first commercial Cayuga planting in the Finger Lakes, located on the west side of Cayuga Lake on silty loam soils. Hand harvested, whole cluster pressed; fermented in 2 3 stainless steel and 1 3 neutral barrel. Six months' fermentation, full malolactic. Unfined, unfiltered, zero added SO2.
