2021 Domaine Sylvain Pataille, Marsannay L'Ancestrale, Cote de Nuits, France Estancia Distillery Domaine du Tariquet VLAncestrale is drawn from 6080 year old Pinot Noir on Marsannays hillsides, cropped at very low yields of about 20 hl ha. Fermentation is natural with roughly 50% whole clusters and gentle pump overs, followed by about 24 months of levage: a higher share of new barrels in the first year, then once used wood to knit the texture while letting the fruit speak.
